We were looking for the two grid entries that would make a good fifth theme entry, and the first four were:

17-A [Catcher’s tactic, while awaiting an outside pitch?] = ANGLED CROUCHING

27-A [Figure at an agricultural competition?] = SOYBEAN JUDGE

48-A [Janeless ape man?] = LONELY TARZAN

60-A [Soccer player who loves chip shots?] = DINKING PROMOTER

“Something’s Different About You” read our title, and something had indeed changed: in each theme entry, the first word is one letter off from being the full name of a famous person associated with the second word. Like:

ANGLED = Ang Lee, director of “Crouching Tiger, Hidden Dragon.”

SOYBEAN = Roy Bean, eccentric Wild West judge.

LONELY = Ron Ely, TV’s Tarzan.

DINKING = Don King, iconic boxing promoter.

What other two entries satisfy this constraint? The ARCHITECT I.M. Pei is one letter off from IMPEL, making ARCHITECT (67-A) and IMPEL (43-A) our meta answer.
